Our Story

Everything at Schlee's is intentional. We tore our location down to the studs and rebuilt it throughout 2024 and 2025, creating a sophisticated, elegant space fit for energizing mornings, classy evenings, and everything in between. We’re in the historic center of downtown Springfield — 225 S 6th St — on the same block as Abraham Lincoln’s former law offices and just steps from the Old State Capitol.

Everything we bake is made in‑house from scratch and baked fresh each morning. Our coffee is globally-sourced, locally-roasted, and expertly brewed. Our wine list is curated with care, emphasizing French and French-inspired wines but with plenty of variety for every pairing and every palate.

Ashley “Schlee” Rickenbach, Executive Chef and co‑owner

Ashley Rickenbach is the Executive Chef and co‑owner of Schlee's Gourmet Bakery & Bottle Shop. A baker, sommelier, and coffee enthusiast, she brings a precise, intentional approach to everything on the counter and in the glass. If you're wondering why Schlee's Gourmet Bakery & Bottle Shop is named what it is, look no further than Ashley, or as her friends and family call her, "Schlee."

Our team includes three other dedicated co-owners with a passion for food and wine, as well as an impressive staff of talented pastry chefs, experienced baristas, and three sommeliers accredited by the Court of Master Sommeliers.
